The Science Behind Cell-Cultivated Fish

Cultivated technology, also known as cell-cultivated technology, is an innovative approach that allows for the production of animal proteins directly from cells, eliminating the need to harvest the animal. This process involves growing cells in a bioreactor, often employing fermentation techniques similar to beer production. Wanda Fish Technologies is taking this concept a step further by focusing on creating whole-cut cultivated fish filets, particularly bluefin tuna. By utilizing muscle and fat cells, they aim to mimic the texture, flavor, and nutritional value of wild-caught fish.

A Unique Approach to Bluefin Tuna Production

Daphna Heffetz, the Co-Founder and CEO of Wanda Fish, shared with TechCrunch the company’s vision and achievements. “We are one of the very few companies that succeeded, without any prior knowledge, in making bluefin, which is highly demanded and one of the tastiest fish,” Heffetz remarked. She also highlighted the challenges with bluefin tuna, noting its contamination issues. Despite these challenges, Wanda Fish’s dynamic team, rich in experience and diverse ideas, is confident in their approach.

Competition and Collaborations

Wanda Fish is not alone in this venture. They join the ranks of companies like BlueNalu, which has already raised over $80 million and is also working on bluefin tuna, especially the premium-priced toro cut. Wanda Fish’s journey began in 2021, co-founded by Heffetz and food tech incubator The Kitchen Hub. The company has also formed partnerships with Tufts University and is collaborating with David Kaplan, a renowned cellular agriculture expert.

Progress and Future Plans

The company has made significant strides in its research, achieving a whole-cut prototype by forming a 3D filet structure using bluefin tuna cells. Their proprietary technology allows them to control fat levels precisely, paving the way for producing various cuts, including the coveted toro cut. With the recent funding, Wanda Fish plans to optimize its technology and scale its cultivated whole-cut filet of bluefin tuna prototype. Looking ahead, Heffetz anticipates obtaining regulatory approvals by 2025 and introducing their product to restaurants by 2026.
